Sweet Potato Pie

Before we start, let’s gather all the necessary ingredients for the pie crust and the sweet potato filling.

For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon granulated sugar
1/2 cup (1 stick) unsalted butter, cold and cut into cubes
3-4 tablespoons ice water
For the Sweet Potato Filling:
2 cups mashed sweet potatoes (about 2 large sweet potatoes)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup unsalted butter, melted
1/2 cup evaporated milk
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
For Garnish (optional):
Whipped cream
Ground cinnamon

Step 1: Preparing the Pie Crust
Mix Dry Ingredients: In a large bowl, whisk together the flour, salt, and sugar.
Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Add Ice Water: Gradually add the ice water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. You may not need all the water.
Form the Dough: Gather the dough into a ball and flatten it into a disk. Wrap the disk in plastic wrap and refrigerate for at least 30 minutes.
Roll Out the Dough: On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish, pressing it gently into the bottom and sides. Trim any excess dough and crimp the edges as desired.
Step 2: Preparing the Sweet Potato Filling
Cook the Sweet Potatoes: Peel and cut the sweet potatoes into chunks. Place them in a large pot of water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.
Mix the Filling: In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, melted butter, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt. Mix until well combined and smooth.
Step 3: Assembling and Baking the Pie
Preheat the Oven: Preheat your oven to 350°F (175°C).
Fill the Pie Crust: Pour the sweet potato filling into the prepared pie crust, spreading it evenly.
Bake the Pie: Bake the pie in the preheated oven for 50-60 minutes, or until a knife inserted into the center comes out clean. If the edges of the crust start to brown too quickly, cover them with foil or a pie shield.
Cool the Pie: Remove the pie from the oven and let it cool completely on a wire rack.
Step 4: Serving the Pie
Garnish (Optional): Before serving, top the pie with a dollop of whipped cream and a sprinkle of ground cinnamon, if desired.
Serve and Enjoy: Slice the pie and serve. Enjoy the creamy, spiced flavors of this classic sweet potato pie.
