Nacho Cheese Beef Wrap

Ingredients
For the Beef Filling:
Ground beef: 1 pound (450g)
Onion: 1 small, finely chopped
Garlic: 2 cloves, minced
Taco seasoning: 2 tablespoons
Water: 1/4 cup (60ml)
Salt and black pepper: To taste
For the Nacho Cheese Sauce:
Butter: 2 tablespoons
All-purpose flour: 2 tablespoons
Milk: 1 cup (240ml)
Cheddar cheese: 2 cups (200g), shredded
Paprika: 1/2 teaspoon
Salt: 1/2 teaspoon
Cayenne pepper: 1/4 teaspoon (optional, for extra heat)
For the Wraps:
Flour tortillas: 4 large
Lettuce: 2 cups, shredded
Tomatoes: 2 medium, diced
Jalapeños: 1-2, sliced (optional)
Sour cream: 1/2 cup (120ml)
Green onions: 2, sliced (optional)

Instructions

Step 1: Prepare the Beef Filling
Cook the beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
Season the beef: Add the taco seasoning and water to the skillet. Stir to combine and cook for another 2-3 minutes until the mixture thickens. Season with salt and black pepper to taste. Remove from heat and set aside.
Step 2: Make the Nacho Cheese Sauce
Melt the butter: In a medium saucepan over medium heat, melt the butter.
Make the roux: Add the flour to the melted butter and whisk continuously for about 1 minute to form a roux.
Add the milk: Gradually whisk in the milk, continuing to whisk until the mixture is smooth and begins to thicken, about 2-3 minutes.
Add the cheese: Remove the saucepan from heat and stir in the shredded cheddar cheese, paprika, salt, and cayenne pepper (if using). Continue to stir until the cheese is completely melted and the sauce is smooth.
Step 3: Assemble the Wraps
Warm the tortillas: Warm the flour tortillas in a skillet over medium heat or in the microwave for a few seconds until pliable.
Add the fillings: Place a warm tortilla on a flat surface. Spread a layer of the beef mixture in the center, followed by a generous spoonful of nacho cheese sauce. Top with shredded lettuce, diced tomatoes, sliced jalapeños (if using), a dollop of sour cream, and sliced green onions.
Wrap it up: Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap.
Step 4: Serve
Serve immediately: Serve the nacho cheese beef wraps hot with extra nacho cheese sauce on the side for dipping if desired.
