Crunchy Asian Chicken Salad



4 cups shredded napa cabbage
2 cups shredded romaine lettuce
2 cups cooked chicken breast, shredded

1 cup shredded carrots
1 red bell pepper, thinly sliced
1 cup mandarin oranges, drained
1/2 cup sliced almonds, toasted
1/4 cup chopped fresh cilantro
1/4 cup green onions, thinly sliced
1/4 cup crispy wonton strips (optional)
Sesame Dressing:

1/4 cup rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon grated fresh ginger
1 garlic clove, minced
1/4 cup vegetable oil
Salt and pepper to taste


Prepare the Salad:

In a large bowl, combine the shredded napa cabbage, romaine lettuce, cooked chicken, shredded carrots, red bell pepper, mandarin oranges, toasted almonds, chopped cilantro, and green onions. Toss to mix evenly.
Prepare the Sesame Dressing:

In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic.
Gradually whisk in the vegetable oil until the dressing is well combined and emulsified.
Season with salt and pepper to taste.
Assemble the Salad:

Drizzle the sesame dressing over the salad and toss gently to coat all the ingredients evenly.
Top with crispy wonton strips if desired.
