Big apple fritters recipe

Ingredients :

2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup milk
2 teaspoons vanilla extract
2 cups apples (peeled, cored, and chopped into small pieces)
Oil for frying (vegetable or canola oil works well)
Powdered sugar for dusting (optional)

Instructions

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
In another bowl, whisk the eggs, milk, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Don’t overmix. The batter will be thick.
Gently fold in the chopped apples, ensuring they are evenly distributed throughout the batter.
Heat oil in a deep skillet or pot to about 350°F (175°C) over medium heat.
Using a spoon or scoop, carefully place a large dollop of batter into the hot oil, shaping it into a round fritter. You can make them as big as you like, just ensure they cook through.
Fry the fritters for about 2-3 minutes per side or until they turn golden brown and are cooked through. Cook them in batches, being careful not to overcrowd the pan.
Once cooked, use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
Optionally, while they’re still warm, dust the apple fritters with powdered sugar for a sweet finish.
