Pan pizza

Ingredients:

For the dough:
2 1/4 teaspoons active dry yeast (1 packet)
1 teaspoon of sugar
1 1/2 cups (360 ml) lukewarm water (110°F/45°C)
3 1/2 cups (450 g) all-purpose flour
2 tablespoons of olive oil
1 teaspoon of salt
For the sauce:

1 can (15 oz) tomato sauce
2 tablespoons of tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon of sugar
Salt and pepper to taste
For the toppings:
2 cups (200 g) grated mozzarella cheese
1/2 cup (50 g) grated parmesan
Assorted toppings (pepperoni, mushrooms, peppers, onions, olives, etc.)
Optional additions:

Red pepper flakes for a spicy touch
Fresh basil leaves for decoration

Instructions:

1. Prepare the dough:

In a small bowl, dissolve the sugar in the warm water.  Sprinkle the yeast over the water and let sit for about 5 minutes, until foamy.
In a large bowl, combine the flour and salt.  Make a well in the center and add the yeast mixture and olive oil.
Stir until the dough begins to come together, then turn it out onto a floured surface and knead for about 8 to 10 minutes, until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.
2. Prepare the sauce:
In a medium bowl, combine tomato sauce, tomato paste, oregano, basil, garlic powder, onion powder, sugar, salt and pepper.  Mix well and set aside.
3. Assemble the pizza:

Preheat your oven to 475°F (245°C).
Once the dough has risen, roll it out and place it on a lightly floured surface.  Divide it into two equal portions if you are making two smaller pizzas.
Grease a cast iron skillet or baking dish with olive oil.  Stretch and press the dough into the pan or pan, pushing it toward the edges.
Spread a generous amount of pizza sauce on the dough, leaving a small border around the edges.
Sprinkle shredded mozzarella and Parmesan cheese evenly over sauce.
Add desired toppings.
4. Cook:
Place the pan or pan in the preheated oven and bake for 15 to 20 minutes, or until the crust is golden brown and the cheese is melted and bubbling.
If you prefer a crispier crust, you can bake the dough for 5 minutes before adding the sauce, cheese and toppings.
5. Serve:

Remove the pizza from the oven and let it cool for a few minutes before slicing.
Garnish with fresh basil leaves or red pepper flakes if desired.

Tips for success :

For a fluffier crust, use bread flour instead of all-purpose flour.
Let the dough rise slowly in the refrigerator overnight for a deeper flavor.
Make sure your oven is fully preheated to ensure a crispy crust.
