Rustic Italian Sausage with Peppers and Onions over Garlic Mashed Potatoes


1 lb Italian sausage
2 bell peppers, sliced
1 large onion, sliced
3 cloves garlic, minced
2 tbsp olive oil1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste
4 large potatoes, peeled and cubed
1/2 cup milk
2 tbsp butter
1/4 cup grated Parmesan cheese

In a large skillet, heat olive oil over medium heat. Add sausage, breaking it into pieces, and cook until browned.
Add bell peppers and onion to the skillet, cooking until vegetables are tender.
Stir in minced garlic, basil, and oregano, cooking for another minute until fragrant.
For the mashed potatoes, boil the cubed potatoes in salted water until tender, about 20 minutes.
Drain potatoes and mash with milk, butter, and Parmesan cheese until smooth.
Serve the sausage and peppers over the mashed potatoes.
