Baklava Rolls


1 package phyllo dough
1 cup melted butter

2 cups mixed nuts (walnuts, pistachios, almonds), finely chopped
1 teaspoon ground cinnamon
1/2 cup sugar
1 cup honey
1/2 cup water
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice


Preheat oven to 350°F (175°C). Brush phyllo sheets with butter and layer 3-4 sheets together.
Mix nuts, cinnamon, and 1/2 cup sugar; spread over phyllo.
Roll up tightly, place in baking dish, and bake for 30-35 minutes until golden.
Combine honey, water, 1/2 cup sugar, vanilla, and lemon juice in a saucepan; simmer for 10 minutes.
Pour syrup over baked rolls and let soak.
