Sizzling Skewers: Surf & Turf Meets Chimichurri

Ingredients:

1 lb sirloin steak, cut into 1-inch cubes
1/2 lb shrimp, peeled and deveined
2 tbsp olive oil
Salt and pepper to taste
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
Chimichurri Sauce:

1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
3 cloves garlic, minced
1/2 cup olive oil
1/4 cup red wine vinegar
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt and pepper to taste


Instructions:

Preheat grill to medium-high heat.
In a bowl, toss steak and shrimp with olive oil, salt, and pepper.
Thread steak, shrimp, bell peppers, and onion onto skewers, alternating between each.
Grill skewers for 2-3 minutes per side, until steak is cooked to desired doneness and shrimp are pink and opaque.
In a separate bowl, mix parsley, cilantro, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, salt, and pepper to make chimichurri sauce.
Serve skewers hot with chimichurri sauce drizzled over the top.
