SAVORY SHREDDED CHICKEN WITH CREAMY GRAVY OVER MASHED POTATOES

Ingredients:
For the Shredded Chicken and Gravy:
4 boneless, skinless chicken breasts (or thighs)
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1/2 cup sour cream
1 small onion, diced
2 cloves garlic, minced
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper to taste
2 tbsp unsalted butter
For the Mashed Potatoes:
4 large russet potatoes, peeled and quartered
1/2 cup milk
4 tbsp unsalted butter
Salt and pepper to taste
1/4 cup sour cream (optional for extra creaminess)
Instructions:
For the Shredded Chicken and Gravy:
Cook the Chicken: In a large skillet or Dutch oven, melt the butter over medium heat. Add the diced onion and garlic, sautéing until softened (about 3-4 minutes). Place the chicken breasts in the skillet and pour in the chicken broth. Add the thyme, parsley, salt, and pepper. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and tender.

Shred the Chicken: Once the chicken is cooked, remove it from the skillet and shred it using two forks. Set the chicken aside.

Make the Gravy: In the same skillet, stir in the cream of chicken soup and sour cream, whisking until smooth. Add the shredded chicken back into the skillet and stir to coat in the creamy gravy. Simmer for an additional 5 minutes, allowing the flavors to meld.

For the Mashed Potatoes:
Boil the Potatoes: While the chicken is cooking, bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes: Add the butter, milk, and sour cream (if using) to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

Serve:
Plate the Dish: Serve a generous portion of mashed potatoes on a plate and spoon the shredded chicken and creamy gravy over the top.
Garnish: Garnish with fresh parsley or extra black pepper if desired.

Make It Comforting: Add sautéed mushrooms or peas to the gravy for extra flavor and texture.
Slow Cooker Option: You can cook the chicken in a slow cooker on low for 4-5 hours, then shred and add the gravy ingredients before serving.
