Ingredients:
1 can (16 ounces) refried beans
1 can (14 ounces) whole kernel corn, drained
1 ½ pounds ground beef or preferred meat
1 package taco seasoning mix
1 can enchilada sauce
1 small can green chilis
8 large tortillas, halved (your choice)
2 cups shredded Fiesta blend cheese
Chopped green onions for garnish
Instructions:
Preheat the oven to 350°F.
Brown the ground beef in a large skillet.
Add taco seasoning and simmer for a few minutes.
Stir in enchilada sauce, refried beans, corn, and green chilis.
Combine well and simmer for a few more minutes to heat through.
Grease the bottom of a 9×13 baking pan and place four halved tortillas to cover the bottom.
Top the first layer of tortillas with half of the meat mixture and half of the shredded cheese.
Add another layer of halved tortillas on top of the cheese.
Cover the tortillas with the remaining meat mixture and the rest of the shredded cheese.
Bake for 20 minutes.
Garnish with chopped green onions.
Serve with small dishes of salsa, sour cream, chilis, or any other preferred toppings for your family or friends to customize their burritos.
