Salmon, Shrimp, Cheesy Broccoli with Corn

Ingredients

For the Salmon and Shrimp:
2 salmon fillets (about 150g each)
200g shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried dill
Salt and pepper to taste
For the Cheesy Broccoli:
2 cups broccoli florets
1 cup shredded cheddar cheese
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup milk
Salt and pepper to taste
For the Corn:
2 ears of corn, husked and cut into halves (or 2 cups of corn kernels)
2 tablespoons butter
Salt and pepper to taste

Instructions

Prepare the Salmon and Shrimp: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Season the Salmon: In a small bowl, mix 1 tablespoon of olive oil, minced garlic, lemon juice, dried dill, salt, and pepper. Brush this mixture over the salmon fillets. Place the salmon fillets on the prepared baking sheet.
Prepare the Shrimp: Toss the shrimp in the remaining 1 tablespoon of olive oil, salt, and pepper. Arrange the shrimp around the salmon fillets on the baking sheet.
Bake the Salmon and Shrimp: Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the shrimp are pink and opaque.
Prepare the Cheesy Broccoli: While the salmon and shrimp are baking, steam the broccoli florets until tender, about 5-7 minutes. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually add the milk, stirring constantly until the mixture thickens. Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste. Toss the steamed broccoli in the cheese sauce.
Prepare the Corn: If using ears of corn, bring a large pot of water to a boil. Add the corn and cook for 5-7 minutes until tender. If using corn kernels, sauté them in a skillet with the butter over medium heat until heated through. Season with salt and pepper to taste.
Assemble and Serve: Arrange the baked salmon and shrimp on plates. Serve with cheesy broccoli and corn on the side.
