Potato Patties with Cheese and Herbs

Ingredients
3-4 potatoes, peeled and cut into small cubes
Salt to taste
Water for boiling
1 green onion, finely chopped
2 tablespoons fresh dill, chopped
2 chicken eggs
40-50 grams of cheese, grated (choose a low-fat variety)
2 tablespoons of flour
Olive oil for cooking
Instructions

  1. Prepare the Potatoes:

Place the peeled and cubed potatoes in a pot of salted water.
Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.
Drain the potatoes and let them cool slightly.

  1. Mash and Mix:

In a large bowl, mash the cooled potatoes.
Add the finely chopped green onion, fresh dill, and grated cheese. Mix well to combine.

  1. Add the Eggs and Flour:

Beat the eggs and add them to the potato mixture along with the flour.
Stir the mixture until everything is well combined. The mixture should be slightly sticky but hold together well.

  1. Form the Patties:

Divide the potato mixture into equal portions and shape each portion into a patty.

  1. Cook the Patties:

Heat a little olive oil in a non-stick pan over medium heat.
Cook the patties until they are golden brown on both sides, about 3-4 minutes per side.
