No-Bake Mango Split Cake

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 2 ripe mangoes, peeled and diced
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh mint leaves for garnish

Instructions:

  1. In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch dish to form the crust.
  2. In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mix until combined.
  3. Gradually add the sweetened condensed milk and lime juice, mixing until smooth.
  4. Fold in the diced mangoes and spread the mixture over the crust in the dish.
  5. In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread over the mango layer.
  6. Refrigerate for at least 4 hours or until set.
  7. Before serving, garnish with fresh mint leaves.
