Mushroom Ravioli with Spinach

Ingredients :

To prepare Mushroom Ravioli with Spinach, you’ll need the following

For the Ravioli:
1 package (16 oz) mushroom ravioli (store-bought or homemade)
For the Spinach Sauce:
2 tablespoons olive oil
2 cloves garlic, minced
1 small onion, finely chopped
1/2 cup white wine (optional)
1 cup heavy cream
1/2 cup vegetable or chicken broth
4 cups fresh spinach, roughly chopped
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Pinch of red pepper flakes (optional, for heat)
1 tablespoon fresh lemon juice (optional, for brightness)
For Garnish:
Grated Parmesan cheese
Fresh parsley, chopped

Instructions :

        Step 1: Cook the Ravioli

Boil Water: Bring a large pot of salted water to a boil.
Cook Ravioli: Add the mushroom ravioli to the boiling water and cook according to the package instructions, usually 3-5 minutes, or until they float to the surface. Drain and set aside.
Step 2: Prepare the Spinach Sauce
Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion and sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
Deglaze with Wine: If using, pour in the white wine and cook for about 2-3 minutes, stirring occasionally, until the liquid has reduced by half.
Add Cream and Broth: Stir in the heavy cream and vegetable or chicken broth. Bring to a simmer and cook for about 5 minutes until the sauce has slightly thickened.
Add Spinach: Add the chopped spinach to the skillet and cook, stirring occasionally, until the spinach is wilted, about 2-3 minutes.
Season: Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes if using. Add the fresh lemon juice if desired. Cook for another 1-2 minutes until the sauce is well combined and creamy.
Step 3: Combine Ravioli and Sauce
Mix Together: Add the cooked mushroom ravioli to the skillet with the spinach sauce. Gently toss to coat the ravioli with the sauce.
Step 4: Serve
Plate: Divide the ravioli and sauce among serving plates.
Garnish: Garnish with additional grated Parmesan cheese and chopped fresh parsley.
