Mexican Shrimp Cocktail


Ingredients:
1 lb shrimp, cooked, peeled, and deveined
1 cup tomato juice or Clamato
1/2 cup ketchup
1/4 cup fresh lime juice
1/4 cup chopped cilantro
1/4 cup finely chopped red onion
1 jalapeño, finely chopped
1 avocado, diced
1 cup cucumber, diced
1 cup tomato, diced
Salt and pepper to taste
Tortilla chips for serving
Instructions:
Mix:

In a large bowl, combine tomato juice, ketchup, lime juice, cilantro, red onion, and jalapeño. Stir well.
Add cooked shrimp, avocado, cucumber, and tomato. Gently toss to combine.
Season:

Season with salt and pepper to taste. Adjust lime juice or jalapeño for more tang or heat if desired.
Chill:

Refrigerate the cocktail for at least 30 minutes to let the flavors meld together.
Serve:

Serve chilled with tortilla chips.
Notes:
For extra flavor, add a splash of hot sauce or Worcestershire sauce.
Serve in individual cocktail glasses for a festive presentation.
