Light carrot gratin

Ingredients:

  • 1 kg carrots
  • 20 cl light cream
  • 2 eggs
  • 1 onion
  • 1 clove garlic
  • 50 g grated cheese (optional)
  • Salt and pepper
  • Nutmeg
  • Chopped parsley to garnish
    🥣 Instructions:
  1. Preheat the oven to 180°C.
  2. Peel and cut the carrots into slices.
  3. Steam or boil the carrots until tender.
  4. Thinly slice the onion and chop the garlic.
  5. In a bowl, beat the eggs with the light cream, salt, pepper and a pinch of nutmeg.
  6. Mix the cooked carrots with the onion, garlic and egg mixture.
  7. Pour everything into a gratin dish. Sprinkle with grated cheese if desired.
  8. Bake for 25-30 minutes until golden brown.
  9. Garnish with chopped parsley before serving.
