Italian Broccoli Soup Recipe
vegetable broth or use all water)
2 cups water
3–4 cloves garlic, peeled and smashed
1 teaspoon kosher salt
Fresh black pepper to taste
1/4 teaspoon ground nutmeg (optional)
3/4 cup orzo or ditalini pasta
Grated Parmesan cheese for garnish
Extra virgin olive oil for garnish
Instructions:
Prepare the Broccoli:
Wash and cut the broccoli into stems and florets.
Cook the Broccoli:
In a large pot, bring the chicken broth and water to a boil.
Add the broccoli and garlic to the pot.
Season with kosher salt and fresh black pepper.
Optionally, add ground nutmeg for extra flavor.
Reduce heat and let it simmer until the broccoli is tender, about 10-15 minutes.
Blend the Soup:
Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender and blend until smooth.
Cook the Pasta:
Return the blended soup to the pot and bring it back to a simmer.
Add the orzo or ditalini pasta to the soup.
Cook according to the pasta package instructions, usually about 8-10 minutes, until the pasta is al dente.
Serve:
Ladle the soup into bowls.
Garnish with grated Parmesan cheese and a drizzle of extra virgin olive oil.
Serve hot with a side of crusty bread if desired.
