French Onion Meatloaf

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese (plus extra for topping)

1/4 cup milk

1 large egg

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

For the Topping:

1 large onion, thinly sliced

1 tablespoon butter

1 tablespoon olive oil

1/2 cup beef broth

Extra shredded mozzarella cheese for topping

Directions:

  1. Preheat Oven:

Preheat your oven to 375°F (190°C). Grease a loaf pan or baking dish.

  1. Caramelize the Onions:

In a skillet over medium heat, melt the butter and add olive oil. Add sliced onions and cook slowly, stirring occasionally, until they’re golden brown and caramelized, about 15-20 minutes. Add beef broth and cook until reduced slightly. Set aside.

  1. Prepare the Meatloaf:

In a large bowl, combine the ground beef, ground pork, French onion soup mix, breadcrumbs, Parmesan, mozzarella, milk, egg, Worcestershire sauce, salt, and pepper. Mix until well combined, being careful not to overwork the meat.

  1. Form and Bake the Meatloaf:

Transfer the meat mixture to the prepared loaf pan, pressing it evenly into a loaf shape. Spread the caramelized onions over the top of the meatloaf and sprinkle with extra mozzarella cheese if desired.

  1. Bake:

Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).

  1. Serve:

Let rest for a few minutes before slicing. Garnish with fresh parsley and serve.
