Ingredients 🛒
6 slices beef, diced
1 small onion, diced
2 cloves garlic, minced
4 cups potatoes, peeled and cubed
4 cups chicken broth
1 cup heavy cream
1 1/2 cups shredded cheddar cheese
Salt and black pepper, to taste
1/4 cup sour cream (for topping)
Chopped chives or green onions, for garnish
Directions 👩🍳
Cook Beef: In a large pot, cook diced beef over medium heat until crispy. Remove beef and set aside, leaving about 1-2 tbsp of beef grease in the pot.
Sauté Onion and Garlic: Add diced onion to the pot and sauté until softened, about 3 minutes. Add minced garlic and cook for an additional 1 minute.
Add Potatoes and Broth: Add cubed potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
Make it Creamy: Use a potato masher to mash some of the potatoes in the pot, creating a thicker consistency. Stir in heavy cream and shredded cheddar cheese until melted and smooth.
Season and Serve: Season with salt and black pepper to taste. Ladle soup into bowls and top with crispy beef, a dollop of sour cream, and chopped chives or green onions.
