Ingredients:
2 cups cooked, shredded chicken
3 medium zucchinis, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C). Grease a baking dish.
In a large bowl, combine shredded chicken, zucchini, cherry tomatoes, olives, and feta cheese.
In a small bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper. Pour over the chicken mixture and toss to coat.
Transfer to the prepared baking dish and bake for 25-30 minutes until zucchini is tender.
Serve hot.
