Ingredients:
4 chicken thighs or breasts, bone-in and skin-on
1 lb baby potatoes, halved
2 tbsp olive oil
Salt and pepper to taste
1 cup chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Dijon mustard
1 tsp dried thyme
Fresh parsley, chopped (for garnish)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Season Chicken and Potatoes: In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken thighs or breasts with salt and pepper. Sear the chicken in the skillet until golden brown on both sides, about 5 minutes per side. Remove the chicken and set aside.
Cook Potatoes: In the same skillet, add the halved baby potatoes. Season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until they start to brown.
Make Sauce: In a medium saucepan, heat the chicken broth and heavy cream over medium heat. Stir in the minced garlic, Dijon mustard, and dried thyme. Gradually whisk in the shredded cheddar cheese and grated Parmesan cheese until the sauce is smooth and creamy.
