Chicken Parmesan Calzone

Ingredients:

Flour for dusting
8 ounces of shredded mozzarella cheese

16-20 ounces of pizza dough
6-7 crispy chicken tenders, fully cooked and sliced
1/3 cup of grated Parmesan cheese
3/4 cup of pizza sauce
2 tablespoons of melted butter

Instructions:

Preheat the Oven:
Heat your oven to 400°F (200°C). Cook frozen chicken tenders if used as per package instructions, then slice them into smaller pieces.

Prepare the Dough:
Dust a clean surface lightly with flour. Roll out your pizza dough into a 12-inch circle, aiming for an even thickness.

Add the Sauce:
Spread half a cup of pizza sauce over one half of the dough circle, leaving a 1-inch margin clear at the edge.

Layer the Fillings:
Onto the sauced half, layer one cup of shredded mozzarella, all the Parmesan, and the sliced chicken tenders, distributing them evenly.

Fold and Seal the Calzone:
Fold the bare half of the dough over the toppings, forming a half-moon. Crimp the edges together firmly to seal, using a fork or your fingers.
Prepare for Baking:
Place the calzone on a greased baking sheet. Brush its surface with melted butter, then make three 1/2-inch cuts on top to let steam escape.
First Bake:
Bake for 20 minutes, then pull it out to add the remaining 1/4 cup of pizza sauce and 1/2 cup of mozzarella on top, keeping clear of the edges.
Second Bake:
Return to the oven for another 10 minutes, or until the cheese is bubbly and the crust golden.
Cool and Serve:
Let it cool for 5-7 minutes before cutting. Serve warm, optionally with extra pizza sauce for dipping.
