Chicken Noodle Soup

Ingredients (serves 4-6)

For the Soup:

1 lb boneless, skinless chicken breasts or thighs (about 2-3 pieces)
1 tablespoon olive oil (for cooking)
1 medium onion, chopped
2 cloves garlic, minced
3 large carrots, sliced
3 celery stalks, chopped
8 cups chicken broth (or stock)
2 cups water (optional, for a lighter broth)
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried parsley (or 2 tablespoons fresh)
Salt and pepper to taste
1 1/2 cups egg noodles (or your favorite pasta)

Instructions:
Cook the Chicken:

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken breasts or thighs and cook for 5-6 minutes per side until browned. Remove the chicken from the pot and set aside to cool slightly.
