Captain D’s Batter Dipped Fish

Ingredients:

  • 900 g cod, hake, or other white fish
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 cups water
  • Vegetable oil for frying

Directions:

  1. Preheat the oil to 350°F in a deep fryer or a medium-sized saucepan.
  2. In a medium bowl, combine the flour, cornstarch, baking powder, salt, and cayenne pepper.
  3. Whisk in the water until the batter is smooth and slightly foamy.
  4. Pat the fish dry with a paper towel to remove excess moisture.
  5. Dip each fish fillet into the batter, ensuring it is fully coated.
  6. Deep-fry the fillets for 3 to 4 minutes until they are golden brown. If frying multiple pieces, avoid overcrowding the fryer.
  7. Once cooked, let the fish drain on a wire rack.
