Baked Freezer Breakfast Burritos

As a busy professional who absolutely loves cooking, I’m all about finding ways to make my mornings smoother without sacrificing a yummy breakfast. Baked freezer breakfast burritos are a lifesaver in our home. They’re adapted from a classic breakfast burrito but with a freezer-friendly twist that makes them perfect for meal prepping. These burritos are great for those mornings when you need a quick, hearty meal before diving into a busy day. Plus, they’re super customizable so everyone can have their favorite ingredients tucked inside.
These breakfast burritos are fantastic on their own, but if you’re looking to make breakfast a bit more substantial, try serving them with a fresh fruit salad or a side of crispy hashbrowns. For a little extra kick, you can add a small bowl of salsa or guacamole on the side for dipping. A nice warm cup of coffee or a fresh smoothie pairs perfectly to complete the meal.

Ingredients
8 large flour tortillas
1 pound breakfast sausage
1 cup diced bell peppers
1 cup diced onions
12 large eggs
1/4 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup salsa (optional)
Cooking spray or olive oil


Directions


Preheat your oven to 375°F (190°C).
In a large skillet, cook the breakfast sausage over medium heat until it’s fully browned. Remove from the skillet and set aside.
In the same skillet, add the diced bell peppers and onions. Sauté until they’re soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and cook over medium heat, stirring frequently until the eggs are fully cooked and slightly scrambled.
Warm the tortillas slightly in the microwave to make them more pliable for wrapping.
Assemble the burritos by adding a scoop of sausage, a handful of sautéed vegetables, a portion of scrambled eggs, and a sprinkle of both cheddar and Monterey Jack cheese into each tortilla. If you like, add a spoonful of salsa for some extra flavor.
Fold in the sides of each tortilla and roll them up tightly to form burritos. Place each burrito seam-side down on a baking sheet.
Lightly spray the burritos with cooking spray or brush them with olive oil. Bake in the preheated oven for about 15 minutes, or until the tortillas are golden and crispy.
Let the burritos cool completely, then wrap each one in foil and place them in a labeled freezer bag. Freeze for up to 3 months.
When ready to eat, unwrap the burrito from the foil, place it on a microwave-safe plate, and microwave on high for 2-3 minutes, or until heated through.
Variations & Tips
Feel free to mix and match your favorite ingredients. Swap out the sausage for bacon or a vegetarian option like black beans or tofu scramble. Use different types of cheese such as pepper jack or feta for an extra flavor boost. If you enjoy a spicier kick, consider adding diced jalapeños or a few dashes of hot sauce to the filling. For a healthier twist, you can use whole-wheat tortillas and add some wilted spinach to the mix. These burritos are incredibly versatile, so get creative and make them your own!
