Ingredients:
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 cups uncooked white rice
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed frozen vegetables (e.g., peas, carrots, corn)
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1/4 cup grated cheddar cheese (optional)
Instructions:
- Heat oil in a large saucepan over medium-high.
