Air fryer tomato and pepper soup! πŸ… πŸ«‘

Cherry tomatoes, whole (or any tomatoes of your choice)
Peppers, chopped – I used red & yellow
1 red onion, chopped
4 garlic cloves, or more to your taste
Mixed herbs
Black pepper
(You could add chilli if you like a kick)
Place all of the veg and seasoning in the air fryer bowl removing any trays if your one has one.
Cook on 180/200 for 20 to 25 minutes.
Whilst it’s cooking, dissolve a vegetable stock cube in some boiling water as you usually would.
Once veg is cooked, add the liquid stock and blend either with a hand blender or add to a stand mixer, which ever you have.
You can also add cream at this point and some salt to taste but to keep it a healthy soup, I didn’t add any cream or extra salt (there’s salt in the stock cube)
