- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup heavy cream
Instructions:
- Preheat oven to 375°F (190°C).
- Roll out pie crust and place in a 9-inch tart pan.
- In a skillet, sauté onion and garlic until softened. Add spinach and cook until wilted.
- In a bowl, combine ricotta, cheddar, Parmesan, salt, and pepper.
- Add cooked spinach mixture and eggs to the ricotta mixture. Mix well.
- Pour mixture into pie crust.
- Bake for 35-40 minutes or until edges are golden brown.
- Remove from oven and let cool.
Tips and Variations:
- Use frozen spinach, thawed and drained, if fresh is not available.
- Add diced ham or bacon for added protein.
- Substitute feta or goat cheese for a different flavor.
- Serve with a side salad or roasted vegetables. Enjoy and let me know if you give it a try 😊
