Spicy Pickled Cucumber & Veggie Medley

Here’s the recipe for Spicy Pickled Cucumber & Veggie Medley 🥒🥕🌶️✨


Ingredients:

  • 2 medium cucumbers, thinly sliced
  • 2 medium carrots, thinly sliced into rounds or ribbons
  • 1 small red onion, thinly sliced
  • 2–3 garlic cloves, thinly sliced
  • 1 fresh dill sprig (optional)
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds (optional)

Pickling Brine:

  • 1 cup white vinegar (or apple cider vinegar)
  • 1 cup water
  • 2 tbsp sugar
  • 1 tbsp salt

Instructions:

  1. Prep the veggies: Slice cucumbers, carrots, and red onion thinly. Place them in a clean glass jar along with garlic, dill, pepper flakes, black peppercorns, and mustard seeds.
  2. Make the brine: In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until sugar and salt dissolve.
  3. Pour & pickle: Carefully pour the hot brine over the vegetables in the jar until fully covered.
  4. Cool & store: Let the jar cool to room temperature, then seal tightly. Refrigerate for at least 24 hours before enjoying, though flavor deepens after 2–3 days.
