Ingredients
To prepare Cheesy Potato Burritos, you’ll need the following ingredients:
4 large flour tortillas
4 medium potatoes, peeled and diced
1 cup of shredded cheddar cheese
1/2 cup of shredded Monterey Jack cheese
1/2 cup of cooked black beans (optional)
1/2 cup of corn kernels (optional)
1/4 cup of diced green chilies or jalapeños (optional)
1 small onion, finely chopped
2 cloves of garlic, minced
1 tablespoon of olive oil
1 teaspoon of ground cumin
1 teaspoon of chili powder
1 teaspoon of smoked paprika
Salt and pepper to taste
Optional: Salsa, sour cream, and chopped fresh cilantro for serving
Instructions
Step 1: Cook the Potatoes
Boil the Potatoes: Place the diced potatoes in a pot of salted water. Bring to a boil and cook for 10-15 minutes, or until the potatoes are tender. Drain and set aside.
Step 2: Prepare the Filling
Sauté the Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Season the Potatoes: Add the cooked potatoes to the skillet with the onions and garlic. Sprinkle with cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine.
Add Optional Ingredients: If using, add the cooked black beans, corn kernels, and diced green chilies or jalapeños. Stir and cook for an additional 2-3 minutes until everything is heated through.
Step 3: Assemble the Burritos
Warm the Tortillas: Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them more pliable.
Add the Filling: Place a generous amount of the potato mixture in the center of each tortilla. Sprinkle with shredded cheddar and Monterey Jack cheese.
Roll the Burritos: Fold in the sides of the tortilla, then roll it up from the bottom to the top, enclosing the filling. Repeat with the remaining tortillas and filling.
Step 4: Cook the Burritos
Heat a Skillet: In a large skillet or griddle, heat a small amount of olive oil over medium heat.
Grill the Burritos: Place the rolled burritos seam side down in the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
Step 5: Serve
Remove and Cool: Remove the burritos from the skillet and let them cool slightly.
Serve: Serve the burritos with salsa, sour cream, and chopped fresh cilantro if desired.
