🛒 Ingredients:
4 large flour tortillas
2 cups fresh spinach, chopped
1 cup mushrooms, sliced
1 cup shredded mozzarella or cheddar cheese
1/2 cup cream cheese (softened)
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
👩🍳 Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat. Add mushrooms and cook for 5–7 minutes until soft.
Add chopped spinach and cook until wilted, about 2 minutes. Season with garlic powder, salt, and pepper.
Remove from heat and stir in cream cheese until melted and combined.
Lay tortillas flat. Spread mushroom-spinach mixture on one half of each, then sprinkle with shredded cheese. Fold over.
Place folded quesadillas on the baking sheet. Lightly spray or brush the tops with oil for crispiness.
Bake for 10–12 minutes, flipping halfway, until golden brown and crispy.
Slice into wedges and serve warm with salsa or sour cream!
