Ingredients:
8 chicken thighs (bone-in, skin-on)
1 large onion, peeled and sliced into rings
1 cup barbecue sauce
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and freshly ground black pepper to taste
Chopped fresh parsley for garnish (optional)
Directions:
Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil.
Mix the Barbecue Sauce: In a small bowl, combine the barbecue sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Lightly season the chicken thighs with salt and pepper.
Arrange and Coat: Place the chicken thighs skin-side down on the prepared baking sheet. Brush half of the barbecue sauce mixture over the chicken.
Add Onions and Bake: Layer the onion rings over the chicken and bake for 25 minutes.
Flip and Coat Again: Flip the chicken skin-side up, and brush with the remaining barbecue sauce. Continue baking for another 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Optional Broiling: For extra caramelization, broil the chicken for 3-4 minutes.
Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley and enjoy the caramelized onions alongside.
