Ingredients:
For the Meatloaf:
1 lb ground beef
1 lb ground pork
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs
1/4 cup whole milk
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
For the Filling:
1 cup fresh spinach, sautéed
1 cup shredded mozzarella cheese
For the Sauce and Garnish:
1 cup tomato sauce
2 tablespoons olive oil
Fresh parsley, chopped
Optional: roasted potatoes and a sprig of rosemary for serving
Directions:
Prepare the Meat Mixture:
In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, eggs, milk, garlic, oregano, salt, and black pepper. Mix until well combined but do not overmix.
Shape and Fill the Meatloaf:
On a sheet of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
Spread the sautéed spinach evenly over the surface, leaving a 1-inch border. Sprinkle mozzarella cheese on top of the spinach.
Carefully roll the meat mixture into a log, using the parchment paper to guide you. Pinch the edges to seal.
Cook the Meatloaf:
Preheat your oven to 375°F (190°C).
Heat olive oil in an ovenproof skillet over medium heat. Place the meatloaf in the skillet, seam-side down, and sear on all sides until browned, about 5 minutes.
Pour tomato sauce over the meatloaf and transfer the skillet to the oven. Bake for 40–45 minutes, or until the internal temperature reaches 160°F (70°C).
Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley and serve with roasted potatoes and rosemary for a hearty touch.
