Ingredients
For the pasta: 1 lb. pasta (penne, rigatoni, or other)
1 lb. bacon or pancetta, diced
1 onion, minced
3 cloves garlic, minced
3 eggs
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup grated mozzarella cheese
1/2 cup grated Gruyere cheese (optional)
Salt and black pepper, to taste
1 tsp. dried or fresh parsley (for garnish)
Directions
Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
Prepare the carbonara: In a skillet over medium heat, cook the bacon or pancetta until crispy. Remove from pan and drain on paper towels.
In the same pan, add onion and sauté until translucent. Add garlic and sauté for another minute.
In a large bowl, beat eggs with heavy cream, then stir in Parmesan cheese. Season with salt and pepper to taste.
Assembly:Toss cooked pasta with crispy bacon, onion, garlic, and half of the cream and egg mixture.
Add shredded cheeses (mozzarella and Gruyere if using) to pasta mixture. Toss well to coat pasta evenly.
Ninja Foodi (or Air Fryer) Cooking:Preheat air fryer to 360°F (180°C).
Transfer pasta mixture to air fryer basket or Ninja Foodi-safe baking dish.
Pour the remaining cream and egg mixture over the top of the pasta.
Sprinkle with extra cheese if desired.
To Bake: Air fry for about 25 minutes, or until the top is golden brown and crispy.
To Finish: Let sit for a few minutes before serving. Garnish with dried or fresh parsley, if desired.
