New York Style Cherry Cheesecake
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
For the Topping:
- 1 can (21 oz) cherry pie filling
Directions:
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and press the mixture into the bottom of the prepared springform pan to form the crust.
- In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar, mixing until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until the mixture is smooth.
- Pour the cream cheese mixture over the crust in the springform pan, spreading it out evenly.
- Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.
- Remove the cheesecake from the oven and let it cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, spread the cherry pie filling evenly over the top of the cheesecake.
