Angel Chicken Rice

A heavenly dish! Here’s a simple Angel Chicken Rice recipe that serves 4-6 people:

Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 cups uncooked white rice
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed frozen vegetables (e.g., peas, carrots, corn)
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup grated cheddar cheese (optional)

Instructions:

  1. Heat oil in a large saucepan over medium-high.
  2. Add chicken and cook until browned, about 5-7 minutes. Remove from saucepan.
  3. Add onion and garlic and cook until tender, about 3-4 minutes.
  4. Add rice, chicken broth, mixed vegetables, thyme, salt, and pepper. Stir to combine.
  5. Return chicken to saucepan and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked and liquid is absorbed.
  7. Taste and adjust seasoning. If desired, top with cheddar cheese and cover until melted.
  8. Serve hot and enjoy!
