Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lime juice
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Fresh mint leaves for garnish
Instructions:
- In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch dish to form the crust.
- In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mix until combined.
- Gradually add the sweetened condensed milk and lime juice, mixing until smooth.
- Fold in the diced mangoes and spread the mixture over the crust in the dish.
- In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread over the mango layer.
- Refrigerate for at least 4 hours or until set.
- Before serving, garnish with fresh mint leaves.
