Ingredients:
1 (14.5 oz) package of nacho cheese Doritos, lightly crushed
2 1/2 cups of cooked chicken, shredded
1 (13.25 oz) can of black beans, rinsed and drained
1 (13.25 oz) can of whole corn kernels, rinsed and drained
1 1/2 cups of grated Mexican blend cheese, divided
1 (10 oz) can of diced tomatoes with green chiles
1 (4 oz) can of diced green chiles
1 (10.75 oz) can of condensed cream of chicken soup
1 (8 oz) container of sour cream
1 tablespoon of taco seasoning
Directions:
Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by lightly greasing it with non-stick spray.
In a large mixing bowl, combine the shredded chicken, black beans, corn, 1 cup of Mexican blend cheese, diced tomatoes with green chiles, cream of chicken soup, sour cream, and taco seasoning. Stir until all ingredients are thoroughly mixed.
Spread half of the lightly crushed Doritos across the bottom of the prepared baking dish. Then, evenly distribute the chicken mixture over the Doritos layer.
Place the dish in the preheated oven and bake for 20 minutes.
After 20 minutes, remove the casserole from the oven. Sprinkle the remaining Doritos and the rest of the cheese evenly over the top.
Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.
Once baked, remove from the oven and serve the casserole hot. Optionally, garnish with fresh cilantro for added flavor and a pop of color.
